The secret to BBQ beef jerky
It’s funny how difficult it seems to make, at first. It’s all in the sauce and how you cook the meat. Of course, your choice and cut of meat, among other factors, will lead to more satisfying results, as well.
Without further ado, let’s check out our honey BBQ sauce. It’s a classic recipe that involves the traditional ketchup, vinegar and brown sugar combination.
For an authentic off-the-grill flavor, we also add smoked paprika and red pepper. Of course, some honey and molasses are used to offset the heat and add that lip-smacking, sweet and savory element. Finally, we use some dried ingredients, like onion and garlic powder for seasoning.
- 2 cups ketchup
- 2 cups vinegar
- 1 ½ cup honey
- 1 ½ cup molasses
- 1 cup brown sugar
- 2 tsp. smoked paprika
- 1 tsp. salt
- ½ tsp. each black pepper, onion powder, garlic powder and chili power
Combine all of the ingredients in a pot. Use a whisk to stir to a consistent sauce, before bringing it to a boil. Lower to a simmer, cooking and stirring until thick and tasty.
Specialty beef jerky techniques
You can choose between a marinade and seasoning for your jerky. The honey BBQ sauce that we just made will make a perfect marinade after 12-24 hours in the refrigerator.
You can also create an array of useful dried foods. For example, skin a batch of garlic cloves and onion slices, then dehydrate them. Afterward, turning them into powder is as simple as using your food processor.
For unique recipes like this, you may even choose to dry the BBQ sauce, itself. Pour it an inch thick onto solid dehydrating trays and desiccate at 130 degrees F until the moisture is gone. A crucial step in this is process is getting the sauce as thick as possible by simmering it a bit longer when cooking it!
Another option is to create a beef jerky chew. Once the jerky is dehydrated, place one piece at a time into a sturdy food processor. You’ll be able to shred the meat relatively quickly with little effort.
Using your meat dryer machine
